This Skillet Cheesy Beef and Veggie Macaroni is ready to eat in only 20 minutes! It’s a delicious meal that’s perfect for the entire family, including picky eaters!

My family LOVES this recipe and I have been making it for months so I am excited to be sharing the recipe with you all today! This recipe is the perfect family dinner!
Everyone loves it and it makes for wonderful leftovers. It’s such a quick and easy meal to make. It seriously takes around 20 minutes from start to finish!

I would imagine that most of you already have all the ingredients you need. It’s basically ground beef, macaroni, spices, milk, beef broth, frozen mixed vegetables, and cheese.

My kids don’t always love to eat their vegetables, but they do love everything about this recipe, including the vegetables! And the best part for me is that it’s really no work at all to include vegetables in this dish.
You mix in 2 cups of frozen mixed vegetables at the same time you add the uncooked macaroni, and in only about 8 minutes, it’s all cooked and ready to eat once you mix in the cheese!

This Skillet Cheesy Beef and Veggie Macaroni is super delicious and full of flavor! I make it at least once a month, but I made it twice just in the last week because the kids wanted it again.

Skillet Cheesy Beef and Veggie Macaroni
Ingredients
- 1 pound ground beef
- 1 small onion, finely chopped
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried parsley
- 1 teaspoon chili powder
- 3/4 teaspoon salt
- 1/2 teaspoon ground pepper
- 1 3/4 cups milk
- 1 1/2 cups beef broth
- 1 (8 oz.) can tomato sauce
- 2 cups uncooked macaroni
- 2 cups frozen mixed vegetables (carrots, corn, peas, green beans…)
- 2 cups shredded cheddar cheese
Instructions
- Saute ground beef and onion in a 12-inch skillet over medium heat. Drain grease.
- Add garlic powder, paprika, parsley, chili powder, salt, and pepper.
- Stir in the milk, broth, tomato sauce, macaroni and frozen mixed vegetables. Bring to a boil, cover and reduce heat to a simmer. Cook for 8-10 minutes or until pasta is al dente, stirring occasionally.
- Mix in 1 1/2 cups of the cheddar cheese until melted. Top with ½ cup cheddar cheese.

Can this be made with mozarella or another type of cheese?
Yep! You can mix it up however you’d like.

It’s listed above the recipe ingredients. It’s about 5 minutes of prep. The recipe from start to finish should take about 20 minutes.
Can you freeze this recipe?
I haven’t tried it so I am not for sure. I personally would freeze it without the macaroni then add cooked macaroni to the unthawed mixture when ready to eat.
Is there anything else I can use besides the tomato sauce? Trying to avoid tomatoes
You can make it w/o it and I think it would turn out just fine. You may need to add just a little more liquid to make up for it. I also found tomato-less sauce substitutes on google you could check out.

Yes, just use about 1 1/2 cups of beef broth instead. (FYI I haven’t tried it but that should work just fine.)

I use small.
So sorry that’s how it turned out for you. I haven’t had that problem and I’ve made it many times. If you make this recipe again try adding 1/4 cup less of both beef broth and milk.
I use spaghetti sauce instead of tomato sauce.

This is good, filling winter weather food. It makes enough food for several meals for me. For my next batch, I do think it will add some jalapeno peppers for more kick,.

I think both of those will work great! I don’t think you would need to cook the zucchini separately.
Easy & Delicious 😋 Had to make the veggies separately as my gd with autism would spend too much time sorting her food in her mouth. Also didn’t have tomato sauce so I used a cup of enchilada sauce & omitted the chili powder. We also had to use what cheese we had on hand- cheddar & mozzarella. Still came out delish and is going into my quick weeknight meals rotation. Thank you for this yummy recipe.

I have been vegetarian for 25 years and been meal prepping every Sunday for 4 years. I don’t know if there’s ever been a meal I am more excited for during the week

I am an experienced cook and thought this might work bettter in the oven. My skillet burned the bottom of this dish black. Not very edible after that mishap. Next time it will go into a casserole dish and in the oven.
So sorry about the mishap. I always make it as per my recipe instructions just in the skillet and it turns out great.
